Yield: 16 to 20 squares

2              cups                       Granola

2              cups                       Oat Flakes

1              cup                         Dried fruit, chopped (cranberries, raisins, chopped                                                          apricots etc).

1              cup                         Sunflower or Sesame Seeds

½             cup                         Chopped Nuts

¾             cup                         Honey

¾             cup                         Peanut Butter

2                                              Eggs, beaten     

4              tbsp                       Butter

Grease a square 9” x 9” pan. Mix dry ingredients together in a bowl. In a saucepan, mix honey and peanut butter until smooth. Add beaten eggs slowly and bring to a boil. Remove from the heat and stir in butter until melted. Add to dry ingredients, mixing thoroughly. Press into pan and refrigerate. Cut into squares. To store, wrap each square for lunches and store in the refrigerator.

Note: If you want to leave out the nuts and peanut butter use pea butter to replace it (which is made from legumes and developed in Legal [Alberta]). The pea butter is also high in protein. If that doesn’t interest you just be sure there’s enough honey to act as glue to stick the ingredients together and proceed with the method.
