Serves: 4 to 6 for dinner

  • 4 to 6   (approx.  1 ½ lbs.)  Chicken Breasts, skinless and boneless, cut into
  •                                      ½”pieces
  • 2          Tbsp                 Unsalted Butter
  • 1                                  Orange
  • ¼         tsp                    Crushed Dried Chilies
  •             pinch                Grated Ginger or 2 slices gingerroot
  •             Salt and Pepper to taste

Melt butter and brown chicken for 5 minutes. Grate orange peel and squeeze juice to chicken along with the remaining ingredients. Simmer covered for 20 to 30 minutes.

Adjust seasoning. Serve with pasta or rice.
