Tres Carnales shares their recipe on CTV Morning Live for mexican style meatballs or Albondigas
Albondigas with Roasted Tomato and Chile de Arbol sauce.
Makes 12 large meatballs
Ingredients:
- 200g. ground veal
- 200g .ground pork 25%fat
- 250g. ground beef
- 1tsp. ground thyme
- 1tsp. fried oregano
- 1tsp. smoked paprika
- 1tsp. granulated garlic
- 1tsp. powdered chile morita
- 1/4 cup bread crumbs
- 3 tbsp. skim milk
- 2 tsp. salt
- 1/2 cup cooked white rice
- 2 eggs
Directions:
Combine all ingredients in a bowl and hand mix for 5 min. Form into 1/4 cup meatballs. Pre heat a frying pan at medium heat.
Add oil then add meatballs and brown. Should take about 15 min to brown meatballs on all sides. (TIP: Make sure not to not overcrowd the pan to ensure even searing. Do in two batches if necessary)
Add the Roasted Tomato Cinnamon Salsa and simmer on medium heat for 45 min to 1 hour. Sauce will reduce and flavors will develop as it thickens. Adjust seasoning and add salt if needed.
Tomato cinnamon salsa
Ingredients:
- 10 ripe tomatoes
- 5 cloves of garlic
- 1tsp of cinnamon
- 750 ml of chicken stock
- 1 bay leaf
- 1cup of chile de arbol
- Salt
- 1tsp of baking soda
Directions:
Combine all the ingredients in a blender and pulse to your liking of consistency.
