Sorrentino's cooks up a 20 Clove Roasted Chicken and Sausage (or 'Garlicious Chicken) in the CTV Morning Live kitchen to promote the restaurant's 22nd annual Garlic Festival which runs until May 11. Click here to learn more about Sorrentino's.
20 Clove Roasted Chicken and Sausage
- 3 oz Sausage
- 6 oz Chicken Breast
- 2 tbsp Butter
- 1 tsp Thyme
- 20 cloves Garlic- peeled
- 3oz White Wine
- 1/3 cup Butter A/R
- 1/3 cup Olive Oil A/R
- To taste Salt, pepper
Directions: Melt butter with olive oil in an oven safe pan. Rub Chicken with liberal amounts of salt, pepper and thyme. Turn up the heat on your pan to high and sear chicken on all sides. Put garlic and sausage into pan along side chicken.
Place into a pre heated 350 degree oven and roast for about 18-20 minutes. Remove from oven and transfer chicken to a cutting board and allow to rest. Place pan over medium heat. Deglaze pan with white wine and allow to reduce.
When liquid has reduced by half remove from heat. Add remaining butter to pan and allow to melt. Slice Chicken and transfer to plates or a platter.
Top with sauce and serve immediately.
