Beef & Guinness Stew
- 5 Kg diced beef
- 12 carrots
- 2 white onions, chopped
- 2 celery bunches, chopped
- 1 head of garlic
- 1/2 cup of Rosemary
- 4 bay leaves
- 4 L Guinness
- 4 L beef Stock
- mushrooms, quartered
- 2 cups all purpose flour
- 4 cups beef
Directions: Sear beef in large stock pot. Add vegetables and herbs to pot and cook for 10 minutes. Add Guinness and enough beef stock to cover the meat and vegetables. Bring stew to a boil, reduce to a simmer and cook for one hour or until beef is fork tender. Add mushrooms and simmer for an additional ten minutes. Whisk together water and flour to make a slurry and gradually add to stew while stirring. Season with salt and pepper.
Guinness Steak Bites
- 7 oz sirloin steak (diced)
- 1 oz mushrooms (sliced)
- 1 oz bell peppers (sliced)
- 4 oz Guinness Irish Stout
- 2 oz Guinness gravy
- Montreal steak spice
- Salt & pepper
Directions: Sear beef in sauté pan, season in salt and pepper. Add veggies and lightly brown. Add gravy and Guinness – bring to a simmer. Transfer dish over to hot skillet. Add steak spice.
