After providing a few helpful hints for navigating the outdoor farmer's markets this summer, The Vitality Kitchen's Chef Bianca Osbourne shares her recipe for a market-sourced Pistachio Salsa.

Pistachio Salsa Rustica with Asparagus


Ingredients:

  • 1 bunch green onions, sliced
  • 1/2 cup sliced pistachios
  • 2 tablespoons red wine vinegar

  • 2 tablespoons capers

  • 1/2 cup chopped mint
  • 1 tablespoon chopped basil
  • 1/3 cup olive oil
  • 1 tbsp organic butter
  • Sea salt and pepper to taste
  • 1 bunch asparagus


Directions:

In a mixing bowl, toss the onions and pistachios with the red wine vinegar. Set aside to macerate for at least 15 minutes.

Add the capers and herbs to the bowl with the green onions and pistachios. Slowly whisk in the olive oil. Add salt and pepper to taste. Set aside.

Heat a large skillet over a medium flame. When hot, add one tablespoon of butter. Add the asparagus, and saute until tender, about two to three minutes per side, depending on the thickness of the spears.

Divide the asparagus among four plates. Top generously with pistachio salsa rustica."
