Cucumber and Tuna salad

Ingredients:

  • 1 cup Greek Yogurt
  • 1 tsp honey
  • 1 tbsp Gaylea Gold Sour Cream
  • 1 tbsp chopped fresh scapes or 1 minced clove of fresh garlic
  • 1 tbsp finely chopped fresh Dill
  • 1/4 cup finely diced roasted pepper
  • 1 seedless cucumber sliced or chopped
  • 1 can Gold Seal No Drain flaked white tuna
  • Juice of one fresh lime

Directions:

In a medium sized mixing bowl, combine  honey, yogurt, sour cream, scapes, dill, roasted pepper and mix well.  Drizzle lime juice into mixture and continue to stir.  Add cucumber and mix until all the cucumber is covered.  Place a cup of the salad onto 4 plates and flake Tuna over the Salads

Watermelon, Tuna Salsa

Ingredients:

  • 2 cups diced watermelon
  • 1/2 cup sweet peas
  • 1 cup finely diced cucumber
  • 1/4 cup finely chopped mint
  • 1/4 cup finely chopped basil
  • 1 tin of Gold Seal No Drain flaked white tuna
  • 2 tbsp extra virgin olive oil
  • Juice of one fresh lime
  • Fresh baby Arugula for garnish
