Roasted Pork Belly Filibun with Pineapple Salsa

  • ½ lb Pork Belly Roasted
  • Hoisin Sauce
  • Thinly Sliced Cucumber
  • Thinly sliced Cabbage
  • Sprigs of Fresh Cilantro
  • 2 Cups Fresh Pineapple Pureed
  • ½ Tsp Minced Thai Chilies Minced
  • 1 Tsp Minced Red Onion
  • 1 Tsp Chopped Cilantro
  • Ciabatta buns
  • Salt and Pepper to taste

Directions:

Cut the pork belly in 2 inch wide strips. Season with Salt and Pepper. Roast in 400 degree oven for 10 minutes, then turn down to 225 degrees and continue roasting for 45 min until tender. Set aside to cool. Slice pork belly in ¼ inch slices.

For the Pineapple Salsa: Skin and core the fresh pineapple and puree in a blender. In a mixing bowl, add the pineapple, thai chilies, red onion and cilantro and mix until full incorporated.

To Assemble: Half and toast the Ciabatta bun. Smear a thin layer of Hoisin sauce on both sides. Place 4-5 slices of cucumber on the bottom. Layer 4-5 slices of the pork belly on top of the cucumber. Spoon a Tbsp of the pineapple salsa on the pork belly. Top with sliced cabbage and few sprigs of cilantro.
